About the Chef

Chef Nicolas GarbayNicolas Garbay offers a menu inspired by French cuisine that's driven by his passion for gastronomy. Born in the Atlantic Pyrenees, Nicolas was immersed at an early age in the cooking world. Starting his training at 15, he was fortunate to receive an apprenticeship in Béarn, in the southwest of France.

After numerous years as an Executive Chef in Paris, he moved to Quebec and quickly joined the Holt Renfrew team where he takes pride in perfecting the art of entertaining.
